Everyone seems to love oven roasted Brussels Sprouts. I do too.
But sometimes you just don't have the oven space to roast.
What can you do?
You can saute brussels sprouts in a skillet right on your stove top and still get all the delicious flavor you love from oven roasting!
Ok, I admit. It's not exactly the same, but sauteed Brussels sprouts with bacon on a stove instead of roasting in an oven does make a pretty tasty, and very easy side dish perfect for your holiday menu. Elegant, yet simple enough to make as an any day side dish too!
Brussels Sprouts not brussel sprouts
Brussels sprouts (or often misspelled brussel sprouts) are cruciferous vegetables. They are full of vitamins A and C and are also good sources of iron. They resemble their sister veggie, cabbage, and look like a mini version of them. And like cabbage, Brussels sprouts when cooked, can give off that distinctive unappealing aroma of sulfur cabbage is well known for.
Like cabbage, they often get an undeserved bad rap because of it. However, they are DELICIOUS when cooked properly. That means, any cooking method that doesn't boil the heck out of them! Brussels Sprouts are absolutely delicious when they are roasted, sauteed, and even when eaten raw. If you are reading this, you probably agree!
I have to admit, as a child, I never ate Brussels Sprouts. I knew they existed, but they just seemed like this weird exotic vegetable to me and I wasn't willing to try them.
As I got older, my palate expanded and I learned I really, really loved cabbage. And, well, Brussels sprouts were like mini cabbages, so I decided I needed to give them another chance. By now, oven roasting them was becoming popular and I gave that a try with this recipe for Roasted Brussels Sprouts with Maple-Balsamic Drizzle.
Wow..I was sold. So delicious.
Next, I decided to try them raw in this Broccoli, Kale, and Brussels Sprouts Salad. Holy cow! Who knew? Apparently I loved Brussels Sprouts!
Brussels Sprouts now are a must have side dish on my holiday menus! I usually roast them, but this year I wanted to try something a little different. Something that would free up my coveted oven space. I decided to give Sauteed Brussels Sprouts a go!
Since I usually add onion to cabbage when I make it, (I think it adds a natural sweetness), I decided to add it to this Brussels sprouts recipe too! It was a great decision. In addition to onion, I love the way bacon pairs with Brussels sprouts. So adding it to this dish was a no brainer!
What I came up with is not only delicious, but so super easy to make it's almost a crime! And you don't need any special equipment to pull this recipe off either.
How do you saute Brussels Sprouts with bacon?
Begin by gathering the ingredients:
- 4 to 5 slices of thick cut smoked bacon
- 1 pound of Brussels Sprouts
- 1 medium sweet onion, chopped
- Apple cider, apple juice, or water
- salt and pepper
Prepare the Brussels sprouts by cutting trimming the stems at the bottom. Then slice each one in half and cut the halves into 1/4-inch slices. (See the photo below)
Set the prepared Brussels sprouts aside.
In large skillet, fry bacon to crisp. Remove to paper towels. When cool enough, chop into bite sized pieces and set aside.
Do not drain off bacon grease. On medium high heat, add the onion and the Brussels sprouts to the hot pan.
Cook over medium high heat until onion is translucent and both onion and sprouts are crisp tender. (About 6 to 7 minutes.) Add reserved bacon back into skillet. Continue to saute until Brussels Sprouts are at your desired doneness. Drizzle in apple cider and cook for another minute or so. Take off heat. Test for salt and pepper, and season as you like.

This easy side dish recipe just might become the best change I've made to my traditional holiday menu yet. It's easy to make, delicious, quick cooking, and frees up my oven space for other traditional dishes like my almost famous Sweet Potato Souffle Casserole!
That's a win-win in my book!
