That's why we love this recipe for this super easy to make Vanilla Cake in a Mug for Two!
I'm the first to admit, I am a bit picky about the texture of my cakes. I like them moist and tender...and well, I've never been much of a fan of cakes "baked" in the microwave. But, I have to tell you, this recipe really works! While it's not exactly like cakes baked in the oven, it's a good likeness. And, I will say, it's the best vanilla mug cake from a microwave I've eaten!
This easy microwave cake recipe is an adaptation of the recipe I used to make Red Velvet Mug Cakes for Easy Red Velvet Pudding Cups. I really loved how the Red Velvet Mug Cakes came out, so I thought it might be a good base recipe for a vanilla cake in a mug. And you know what? I was right!
Microwave mug cakes are popular right now! I was surprised at how many mixes I saw at the grocery store the other day. But of all the flavors I saw, can you believe not one was vanilla? Plus, microwave mug cakes are so easy to make you simply do not need to buy a mix to make them!
My recipe for this microwave mug cake for two does call for self rising flour and buttermilk, because I really believe these two ingredients help make this recipe successful. But, you could make your own self rising flour and substitute buttermilk for plain milk (I'd go with 2%) if you wish.
I topped these lovely Vanilla Cakes in a Mug with whipped topping and, since it's so close to Valentine's Day, a cute little gummy heart.

Tips for making Vanilla Cake in a Mug for Two
- Spray the mugs well with cooking spray to prevent sticking.
- Divide the batter up as evenly as possible.
- Microwave on HIGH.
- Use fresh ingredients, especially the self rising flour!
- Make Funfetti Mug Cake by adding a TBSP of colored jimmies (sprinkles) to the batter before microwaving

Vanilla Cake in a Mug for Two

Quick and easy moist vanilla cake made in a mug in your microwave.
Ingredients
- 1 large egg
- 3 TBSP canola or vegetable oil
- 3 TBSP low fat buttermilk (or low fat milk)
- 2 tsp. pure vanilla extract
- 1/4 cup granulated sugar
- 1/4 cup self-rising flour
- Whipped topping, optional
Instructions
- Spray large ceramic microwave safe mugs (make sure they are at least 12 oz in size) with cooking spray. Set aside.
- In a small bowl or 4 cup glass measure, whisk together the egg and oil.
- Whisk in milk, vanilla, and sugar.
- Add flour and whisk until batter is smooth.
- Pour equally, into prepared mugs.
- Microwave them one at a time for 1 1/2 minutes on HIGH.
- Test the cake to see if it springs back, if not, put in the microwave for 10 more seconds.
- Repeat with second mug.
- Allow cakes to cool completely. Serve with whipped topping, if desired.
