I guess I got the "stuffing making" gene. I've been told my stuffing is THE dish everyone looks forward to at Thanksgiving each year. I've never shared my traditional mushroom-leek stuffing on this blog...maybe some day...but until then, I'm sharing this delicious Easy Cherry Pecan Stuffing! This recipe is perfect for the holidays. Since it's so easy, it might even keep your holiday stress level down a notch!
If you are a fan of tart cherries, you will love this dish. The cherries give this stuffing just a hint of sweetness among all the savory flavors. Chopped pecans add a bit of a "bite" to the over all fluffiness of the dish. When I make my traditional stuffing, I use a combination of fresh bread and packaged stuffing mix...but to make things easier with this recipe, I opted to only use packaged herb stuffing mix in this dish.
Tips for making Easy Cherry Pecan Stuffing:
- Easy Cherry Pecan Stuffing can be made ahead of time and baked in the oven before serving. You can prepare the stuffing and place into a greased casserole dish a day or two before serving it, cover it, and place in the fridge. When the day you want to serve it arrives, preheat oven and bake until it's warmed through and crisp on the top.
- Start with a BIG skillet! If you start with a big enough skillet, you can mix everything right in the skillet, then transfer to your greased casserole and bake! I'm always up for less dishes to wash no matter what time of year it is!
- Use the best tart dried cherries you can find! I used Montmorency tart dried cherries in this recipe. I became sold on these slightly sweet/ mostly tart dried cherries when I visited Traverse City, MI a few years ago and have been in love with them ever since!
Easy Cherry Pecan Stuffing
Plump tart dried cherries give Easy Cherry Pecan Stuffing a hint of sweet while pecans lend a little crunch and store-bought stuffing mix makes it super simple to prepare.
Ingredients
- 1/2 cup unsalted butter, divided
- 1 cup diced sweet onion
- 3 ribs of celery, diced
- 1 tsp. dried thyme
- 1 tsp. dried rubbed sage
- 1 cup coarsely chopped dried tart cherries
- 1 cup chopped pecans
- 1 - 12oz. bag Herb seasoned stuffing cubes
- 3 - 3/12 cups low sodium chicken stock
- 1 large egg, slightly beaten
- salt and black pepper, to taste
Instructions
- Heat oven to 375 degrees F. Grease a large casserole dish or 9 x 13" baking dish. Set aside.
- in large skillet, melt 1/4 cup unsalted butter over med heat. Add in onion, celery, thyme, and sage. Saute until vegetables become soft (6-10 min.), stirring occasionally.
- Add in the cherries, pecans and the rest of the butter. Stir and allow butter to melt.
- Take off heat. Add bag of herb seasoned stuffing cubes and chicken stock (enough to thoroughly moisten the dry herbed bread cubes). Stir to combine. Taste for salt and pepper and add as you like. Stir in beaten egg and transfer to prepared casserole dish.
- Bake in oven for 25-30 minutes, or until heated through.
Prep Time: 00 hrs. 10 mins.
Total time: 55 mins.

So you're the stuffing and biscuit queen eh? :) I'm completely envious of your biscuit making skills and now I am going to have to dream about your stuffing. :) However I can replicate a stuffing recipe much easier than a biscuit one! I love the added cherries and pecans in this. Next time I get to make a holiday meal I am going to make this! I also want you to share that mushroom leek stuffing, that sounds delish!
