This easy fresh apple cake recipe is the perfect ending to any Fall dinner or a delicious treat in the middle of the day. Because this cake is made in one bowl, clean up is easy too! I actually stumbled across this recipe from a friend's feed on Facebook. I like this Old Fashioned Apple Cake recipe because it uses a little less oil than most recipes like this. But, the cake comes out moist and tender because of the delicious fruit inside!I used a combination of Fugi and Honeycrisp apples in this cake, but you can use whatever apple variety you like best. There are lots of apple varieties out this time of year, and they can vary widely from location to location. Even if the charts say a certain type of apple isn't good for baking, you may find you like it! So I say, experiment and see what you like best! Old Fashioned Apple Cake is a one bowl moist fresh apple cake recipe bursting with big chunks of fresh apples.
ingredients:
- 2 large eggs
- 1 1/2 cups granulated sugar
- 1/2 cup canola oil
- 2 TBSP fresh lemon juice
- 2 cups all purpose flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. fresh grated nutmeg
- 6-7 medium fresh apples (I used Fugi and Honeycrisp) peeled, cored and roughly chopped
- powdered sugar, for dusting
instructions:
How to cook Old Fashioned Fresh Apple Cake
- Preheat oven to 350 degrees F. Spray a 9" x 13" baking pan with cooking spray. Set aside.
- In large bowl, whisk together the eggs, sugar, oil, and lemon juice.
- Sift in flour, baking soda, salt, cinnamon, ginger and nutmeg until just combined with the wet ingredients.
- Fold in the fresh apples.
- Pour mixture into prepared pan and level off. Bake in oven for 45 -55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool on wire rack. Can be served warm with ice cream, if desired. When cooled completely, dust with powdered sugar and store in refrigerator.
NOTES:
How soft the apples in the cake come out depends on the variety apple you use. For example, Honeycrisp apples will be soft but a granny smith will still have a bite to it.
