How to Grill Boneless Pork Chops
There's really no mystery to Juicy Grilled Pork Chops. But there is a secret weapon you'll need to make sure they are cooked perfectly. That secret weapon is an instant read thermometer!
This year, I've been lucky enough to have the privilege to work with the Ohio Pork Council. Back in December, I visited a working hog farm here in Ohio and learned all about the science of hog farming. This past weekend, I did a recipe demo for my Easy Broccoli Pasta Salad (with bacon) at the Ohio State Fair representing the Ohio Pork Council. Over the past several months, the Ohio Pork Council has educated me on the best way to cook and enjoy pork.
I think there may be a misconception among home cooks, that pork is not done until it's hard and dry. But that is just not the case! Today's pork is leaner than it's ancestors. To get the best taste out of today's pork, do not cook it beyond 145 degrees F. It's as simple as that! This is especially true of these lean center-cut boneless pork chops used in this Juicy Grilled Boneless Pork Chop recipe!
The only way to really know if grilled boneless pork chops are done and not over done, is to use an instant read thermometer to check it! I cooked these pork chops to 145 degrees as recommended by the Ohio Pork Council and then allowed them to rest for at least 3 minutes before serving.
The result?
Tender, juicy, and flavorful grilled boneless pork chops! Every single time!
I seasoned these grilled boneless pork chops with a delicious homemade seasoning blend I was given as a gift. You'll find the recipe for that seasoning blend from my friend and cattle rancher, Debbie Lyons-Blythe from Kids, Cows, and Grass in a link in the ingredients below. But, you can use any seasoning blend you like. Or, you can use salt, pepper and a little garlic powder too! Sometimes simple is best.
When you cut into these perfectly cooked Juicy Grilled Boneless Pork Chops, you will see a slight blush of pink in the meat. THAT DOES NOT MEAN IT NEEDS TO BE COOKED LONGER! That means they are perfect and will be tender and juicy!

Juicy Grilled Boneless Pork Chops
Boneless, center cut pork chops are coated in a tasty seasoning and grilled to perfection! A blush of pink in the middle assures they will be juicy and tender!
Ingredients
- 6 boneless, center-cut, 1" - 2" thick pork chops
- 1/4 - 1/3 cup Blythe Ranch Meat Seasoning (Click here for recipe) or your favorite seasoning
- 2 tsp. olive oil
Instructions
- Coat both sides of the chops generously with Blythe Ranch Meat Seasoning (link to recipe in ingredients). Set aside.
- Pre-heat grill to med-high.
- Drizzle seasoned chops with olive oil. Place on grate of hot grill. Grill, turning once until chops reach the internal temperature of approximately 145 degrees F.
- Remove chops from grill and allow to sit, loosely covered for 3 min before serving, to allow juices to redistribute.
- Cook time will depend on the thickness of your chops and the temperature of your grill. Make sure you use an instant read thermometer for best results.
Prep Time: 00 hrs. 10 mins.
Total time: 30 mins.
