I'm out west visiting a real live cattle ranch in Kansas courtesy of Certified Angus Beef® brand! That's right, I'm currently on a cattle ranch learning all about what it takes to put beef on our dinner tables. I'll have to tell you all about my experience when I get back. But, in the meantime to honor the visit, I'm sharing this Slow Cooker Cowboy Baked Beans recipe in honor of the Cowboy cooking I'm enjoying!

What is Cowboy Cooking?

You may be wondering what Cowboy Cooking is. I know I wasn't familiar with the term before I did some research.  Basically, it's hearty food, not fancy, meant to satisfy hungry, hard-working cowboys! But you don't have to be a hungry cowboy to enjoy these Slow Cooker Cowboy Baked Beans.

A Slow Cooker is your best summertime friend! 

Making these cowboy baked beans in the slow cooker is such a great method this time of year. I mean, it's summer, and it's hot. You don't need to heat up your kitchen or build a campfire to make these baked beans. Which means even on the hottest of days, you'll keep your cool.

Slow Cooker Cowboy Baked Beans are made hearty with the addition of my favorite brand of beef, Certified Angus Beef® brand. I choose Certified Angus Beef® brand because (as I am learning this weekend) special care goes into ensuring you get the best quality, best tasting beef money can buy. The ground beef really does make a difference in this recipe!

Everyone loves Slow Cooker Cowboy Baked Beans

I made this recipe the last time we had friends over for a BBQ and they raved about them! They really are quite delicious and pair nicely with just about any kind of protein you throw on the grill. But, with all the protein IN them, they are really a meal in themselves. Serve them with a garden salad for an easy weeknight meal! Make sure you add this recipe to your menu this summer. I promise, you'll be glad you did!

Slow Cooker Cowboy Beans

Slow Cooker Cowboy Beans

Easy recipe for cowboy beans made in the slow cooker. Made with ground beef, three kinds of beans, bacon, peppers, onions, BBQ sauce and lots of love! Perfect side dish for your next BBQ.

Ingredients

  • 1 pound ground beef (I used 90/10 Certified Angus Beef® brand )
  • 1 cup finely diced sweet onion
  • 1 - 2 jalapeno peppers, seeds removed, finely diced
  • 1/2 cup diced red bell pepper
  • 2 - 28 oz. cans of pork and beans
  • 1 - 15 oz. can of black beans, rinsed and drained
  • 1 - 15 oz. can of red kidney beans, rinsed and drained
  • 1/2 pound of bacon, cooked crisp and crumbled (or more if you like bacon)
  • 1 cup ketchup
  • 1 cup of your favorite BBQ sauce ( I used Sweet Baby Ray's)
  • 3 TBS Worcestershire sauce
  • 2 TBS yellow mustard
  • 1/4 cup brown sugar (or more to taste)
  • A couple of dashes of liquid smoke (optional)

Instructions

  1. In large skillet, brown ground beef, breaking up chunks as it cooks. Add in the onion and peppers and continue to cook until the onions start to become translucent. Drain off any excess fat. Set aside.
  2. In the crock of a 6 quart slow cooker, add the pork and beans, black beans, kidney beans and all of the remaining ingredients. Stir in the beef. If mixture seems too thick, add bit more ketchup, BBQ sauce, or a little water to get the consistency you like.
  3. Cover and cook on HIGH for 2 - 3 hours, or until nice and bubbly. You can also cook these beans in a covered Dutch oven at 375 degrees F for 40 - 45 minutes or until beans are bubbly. Allow to sit for at least 15 minutes before serving.

Notes

To make this recipe in the oven: Follow directions above using a Dutch Oven. Cover and bake at 375 degrees F for 40 - 45 minutes or until beans are bubbly. Allow to sit for at least 15 minutes before serving.
