Blueberry-Peach Cobbler Muffins are little individual servings of a blueberry-peach cobbler that are so easy to put together! Any fruit will work in this recipe too, but this Blueberry Peach combo is hard to beat!
I've been busy this summer, re-making and photographing some of my favorite older blog posts. Sometimes I've discovered a better way to make something or a new flavor combination or maybe the original post just needed the photos to be a better representation of the recipe. With this recipe, it was a combination of two reasons: updated photos and a new flavor combination.
I love this recipe because it really does not get any easier. You can have a warm and satisfying dessert or snack on your table in no time. The original recipe called for just using preaches but you can use just about any fruit you have on hand. Think of all the possibilities for flavor combinations!

Blueberry-Peach Cobbler Muffins

Easy recipe for individual cobblers made in your muffin tin with fresh peaches and blueberries.
Ingredients
- 4 TBS unsalted butter, melted
- 1 cup all purpose flour
- 1/2 cup granulated sugar
- 1/4 tsp. kosher salt
- 1 1/2 tsp. baking powder
- 3/4 to 1 cup low-fat buttermilk
- 1 tsp. pure vanilla extract
- 3 TBS granulated sugar + 1 tsp. ground cinnamon
- 1 - 2 med fresh peaches, pitted and sliced
- 1 cup fresh blueberries
Instructions
- Heat oven to 350 degrees F. Lightly spray muffin tins with cooking spray.
- Pour about 1 tsp. melted butter into each well of the muffin tin.
- In large bowl, combine the flour, 1/2 cup granulated sugar, salt and baking powder. Make a well in the center of the dry ingredients. Pour in the buttermilk and vanilla extract. Stir to combine. (start with 3.4 cup buttermilk and if you need more moisture, add a little more until batter comes together) Do not overmix.
- Drop 1 1/2 TBS to 2 TBS batter into each well. Push a few peach slices and a few blueberries into the batter of each well. Sprinkle with the cinnamon sugar mixture.
- Bake for about 12 - 15 minutes or until the tops just start to turn golden brown. Remove from oven and allow to cool slightly before removing from pan with a spoon. Serve warm, with ice cream, if desired.

Total time: 25 mins.
