If you answered "ME!" to both of these questions then Pepperoni Pizza Potato Skins are for you! In this easy appetizer, I've taken these two game day favorites and mashed them together for a delicious crowd-pleasing snack everyone will love!! Pepperoni Pizza Potato Skins come together in minutes thanks to Kraft® Natural Cheese Shreds and a few simple ingredients.
This is the time of year when the "big game" seems to happen almost every weekend (and sometimes during the week!) I don't want to spend a whole lot of time preparing snacks in the kitchen while everyone else gets to enjoy the game but my friends and family want to nosh on snacks during games. They get bored with the same old easy choices like chips and nachos. That's why these potato skins are a perfect choice for our game days! These "mash up" appetizers were a "touch down" with everyone I served them to!
In my world, game day snacks aren't snacks until they have some cheesy component to them. I love that Kraft® makes so many choices of natural cheeses to choose from! My husband loves the Kraft® Big Slices on sandwiches he takes to work for lunch and I love that I'm feeding my family a cheese that is natural.
You will need to plan ahead a bit to make these appetizers. The potatoes need to be baked ahead of time if you like your baked potatoes done in the oven. If you are in a time crunch and haven't had time to pre-bake the potatoes, a microwave will work in a pinch to get them baked quickly. Once the potatoes are baked and cooled a bit though, it's really fast going from there!
Follow along and see how easy these snacks come together...
I first halved the potatoes and scooped out some of the pulp. I reserved the pulp to use at another time. (I made a twice baked potato casserole for another meal with the pulp, because I hate to waste!)
I sprayed both side of the potato skins with butter flavored cooking spray. Then lined them up, with the skin side down on a baking tray and baked them for 10 minutes in a 425 degree oven to crisp them up a little.
I filled the cavities with some prepared pizza sauce...
topped the sauce with Kraft® Natural Shredded Cheese...
and added a pepperoni slice to each potato skin. I popped them back into the oven for another 10 minutes...
until the cheese was melted and gooey! I removed them to a serving platter and sprinkled some fresh parsley on for color. Then, we gobbled them UP!

Pepperoni Pizza Potato Skins
Baked potato skins are transformed into a delicious game day nosh thanks to a few simple ingredients and Kraft® Natural Shreds!
Ingredients
- 4 - medium to large russet potatoes, baked and cooled
- Cooking spray
- Salt and Pepper, to taste
- 1 cup prepared pizza sauce
- 2 cups Kraft® Natural Shredded Mozzarella Cheese
- 8 Pepperoni slices
- fresh chopped parsley, for garnish, if desired
Instructions
- Slice potatoes in half, being careful to keep skin intact.
- Carefully scoop out potato pulp with spoon leaving about 1/4" to 1/8" of pulp on potato. Reserve the pulp to use at another time. You will not be using it in this recipe.
- Heat oven to 425 degrees F. Spray both sides of potato skins with cooking spray and place, skin side down, on baking sheet. Sprinkle with salt and pepper.
- Bake in oven for 10 minutes. Remove and spoon 2 TBS of pizza sauce into each well. Top each with 1/4 cup Kraft® Natural Shredded Mozzarella Cheese. Top the cheese with a pepperoni slice.
- Return to oven and bake for another 10 minutes, or until cheese is melted and bubbly. Garnish with parsley, if desired. Serve warm, with additional pizza sauce, if desired.
Yield: 8 servings
Prep Time: 00 hrs. 10 mins.
Total time: 30 mins.
