When it comes to summer salads and picnic food, this no mayonnaise Firecracker Coleslaw is a winner!
As much as I LOVE summer (and I really do!), sometimes it needs to just slow down! I find it's the busiest season of them all! From graduations, parties, BBQ's, weddings, birthday celebrations to entertaining on the patio in the warm evenings with friends, it seems that every single moment is booked up with some event
All three of my kids were born in the summer. Of course, they are older now and don't require the elaborate birthday parties they did when they were little, but my family still loves to get together and celebrate their birthdays. Last week, my son turned 21 and we invited my parents and my husband's parents over to celebrate. I had no idea what I was going to serve everyone! ( Believe it or not, there are times when I would prefer to NOT cook for a bunch of people!)
Luckily, a couple of days before his birthday, I found the perfect solution to my party needs. I stopped into Walmart to pick up some milk and eggs for the week, and spotted their fresh, hot fried chicken at the Deli counter. I decided, right then and there, that Deli fried chicken is what I would serve at my son's birthday. I was delighted to find out that Walmart's Deli fried chicken was available in many different sizes; single portions, buckets, bulk quantities of 50 -100 pieces (make sure you call and order these large sizes ahead of time), and the Grab-n-Go 8 piece sizes (hot and cold) pre-packed and ready for purchase.
On the day of the party, I picked up our chicken from the deli, grabbed a few items from the bakery to go with the chicken, and picked up the ingredients I needed to make this super easy to make Firecracker Coleslaw. I can't imagine fried chicken without slaw, and this zippy Firecracker Coleslaw made a great side dish to the chicken. It's a delicious, healthy, fresh side dish full of veggies and complimented the chicken perfectly!
Everyone enjoyed the chicken and all the goodies that I served along with it, including the coleslaw. I enjoyed a stress free evening with my family, because I didn't have to worry about cooking!
With the 4th of July just days away, I'm thinking of picking up more of this time saving chicken for our little celebration! I know I'll be making the Firecracker Coleslaw again as a side dish too!

Firecracker Coleslaw is the perfect side dish to serve with fried chicken or any BBQ main dish. It's a healthy and delicious combination of crunchy vegetables coated in a sweet and sour non-mayo dressing that takes minutes to put together. Slightly spicy, slightly sweet and oh so crunchy!
Ingredients
- 1- 14 oz. package of pre-shredded coleslaw mix (cabbage and carrots)
- 1 medium red bell pepper, diced
- 1 cup green onion, sliced
- 1 cup "summer crisp" canned corn, drained
- 1 finely diced jalapeno pepper
- 1/2 cup chopped fresh cilantro
- 1/2 cup apple cider vinegar
- 3 TBSP granulated sugar
- 1 TBSP canola oil
- salt and pepper, to taste
- dash of ground cayenne pepper (optional)
Instructions
- In large bowl, whisk together apple cider vinegar, sugar, and oil until sugar is dissolved.
- Add in coleslaw mix, red pepper, green onion, corn, jalapeno pepper, and cilantro. Mix to combine with dressing. Taste for salt and pepper and add as you like. For more kick, add a dash of ground cayenne.
- Cover and refrigerate for at least one hour. Stir before serving. Enjoy!
