Get ready for this month's Secret Recipe Club reveal. This month I was assigned to the blog An Affair From The Heart I squealed with delight when I opened the email that said this was the blog I got to cook from this time around!

You see, Michaela was assigned MY blog last month to cook from and I was so excited to pay the wonderful comments and reviews she gave me forward!

Michaela is a stay at home mom to 4 kids and is married to the love of her life for over two decades now.  As I read Michaela's "about page" it was uncanny exactly how much we had in common!

I knew once I started browsing her recipes, it was going to be a tough choice for me to narrow it down to one recipe.  We both seem to like many of the same kinds of recipes!

Michaela and I have sort of "known" each other for some time now through mutual blog sharing groups.  I've always loved Michaela's recipe choices and have drooled more than once over the recipes she shares, but I have never had the opportunity to dive into her blog and make something from it.
So I started making a list of recipes to make from her site.  When I was done, I had 20 or so recipes that I wanted to try!

But, since I can only present ONE recipe today, I decided to go with this extraordinarily delicious strawberry cake recipe. Micheala explains that this is a cake recipe that she received from a friend.  (Aren't those the best kind of recipes?)

Micheala made a standard round, two layer frosted cake from this recipe, but I decided to go the Strawberry Bundt Cake route, because who doesn't love Strawberry Bundt Cake?

Easy Strawberry Bundt Cake starts with a boxed cake mix!

Let me tell you, we LOVED this cake!
It is just bursting with BIG strawberry flavor and that color...OH MY....just gorgeous!  I also love that this cake starts with a boxed mix.  I am a huge fan of doctoring up boxed cake mixes and turning them from ordinary into something extraordinary and this cake recipe does exactly that.

Jello in a Strawberry Bundt Cake?

Yes! Sugar Free strawberry jello adds wonderful strawberry flavor and a beautiful pink color to the cake.

By using sugar free jello, you aren't adding more sugar to the recipe. But, if you are avoiding artificial sweeteners, you could absolutely use a box of regular strawberry jello instead. I made a few other changes from the original recipe besides swapping regular jello for sugar free. I also reduced the oil and added more strawberries in this recipe.

I frosted my strawberry bundt cake with a buttercream glaze that I drizzled over the top of the cake once it was cool. This strawberry bundt cake is super moist and full of delicious strawberries and is the perfect cake for just about any occasion!

This Easy Strawberry Bundt Cake will be making more appearances at my house in the future!

I also will be finding some time to make a few other recipes from An Affair From the Heart....like Grandma's Baked Beans and Crock Pot French Onion French Dip Sandwiches in the upcoming weeks and put a dent in that long list of "must make" recipes I made!

Thank you Michaela for such a great recipe.  I am looking forward to making more yumminess from your lovely blog!

We did love this cake and I think next time, I'll be trying it with the frosting...lol I'm sure it will be a hit both ways! I'm looking forward to making more of your recipes!

  15. I love this recipe. Could you use a yellow cake mix?

    1. Hi Debbie. Yes, I think you could substitute yellow cake mix for white in this recipe.

  16. This recipe sounds wonderful! Could you substitute strawberry cake mix for white and use strawberry crème Jello pudding instead of strawberry gelatin?

    1. Hello! Thanks for your questions! I have not made those substitutes, but I think they would work in this recipe! Let me know how it turns out for you!

    2. I just used a strawberry cake mix and my granddaughter said it was Awesome!! It turned out really good. My question, should it be refrigerated,

  17. Yes, I used strawberry cake mix and as my granddaughter said “ it is awesome”.
I wonder if it needs refrigerated?

    1. Hi there! Thanks for your question. I would refrigerate any leftovers to be on the safe side, since it contains fresh fruit.

  18. I'm making this tomorrow. It's the same as my strawberry cake recipe that I've used for years but just in a bundt cake pan. I am going to try using the thicker frosting it calls for and not the glaze - I think. I believe I could just add strawberry juice or milk and think it down...... I'll post a picture.

    1. Hello! Thanks for your question. You can freeze this cake if you wrap it tightly in plastic wrap and then in foil for a couple of months and defrost before serving.

  20. I made this cake yesterday and it was a big hit for my Bunco group. I noticed that the frosting instructions called for vanilla but the ingredients list didn't. I added a little then tasted and added a little more. The amount I added might have been 1/2 teaspoon. After frosting, I filled the center with fresh strawberries. It was delicious and beautiful. Thank you 😊

    1. Yes! a 1/2 teaspoon is right! It must have been deleted in the original recipe card. I will go in and edit to add. Thank you!

    1. Hi Diane, sorry. The vanilla ingredient amount must have been deleted when the recipe card updated. It's 1/2 teaspoon. I will add. Thank you!

  23. This recipe sounds delicious. I was wanting to know if I make it in mini loaf cakes, how long and what temperature to bake it at?

    ReplyDelete
    Replies
    1. Hi! Thanks for the question. I've never made this recipe in mini loaf pans, but from looking at info on the web, it looks like if you keep the same temperature and reduce baking time by 25% you should have success. Good luck and let us know how they turn out!

    3. Maybe the person meant they used white cake mix? Not sure, but still happy they were happy with this cake recipe! :)

  25. This is a great recipe. My local grocery store didn't have a plain white cake mix so I used a French vanilla mix instead. It came out amazing and I'm actually trying mini-bundt cakes right now using the French vanilla again! I'll keep coming back to this one!

  26. Hi, what brand of boxed white cake mix do you use and how many oz? And how many oz is the strawberry flavored gelatin?

    ReplyDelete
    Replies
    1. Hello! Thanks for your questions! Any brand of cake mix will work. You can find the weight in the recipe card above. You will need a box of "4-serving" jello. The ounces will vary whether you use sugar free or regular strawberry flavored gelatin. Hope this helps.

  27. I made this cake and it was delicious but I found the fresh Strawberries all sunk to the bottom of the pan. Should I have added a bit of flour to them?

    ReplyDelete
    Replies
    1. Hi Betty! So sorry for your problem. I have not had that issue. Maybe your strawberries were cut too big. But you could add a couple of tsp. of flour to the berries to help eliminate this issue.

  28. Can this recipe be made into cupcakes?

    ReplyDelete
  29. Hello! Thank you for your question. Yes, I think it could be made into cupcakes. You will most likely have to adjust the bake time though. Happy Baking!

  30. I made the cake exactly as you stated and added a cream cheese frosting just like nothing bundt cakes. It was a major hit! The cake was so good and moist and tasty. It was for my son's birthday and he said it was the best cake he had ever had. He is 6 but I will always take a compliment! Nice job!

  31. I just made this cake but with a French Vanilla box cake as that’s what I had on hand. Also, I omitted the oil and subbed plain Greek yogurt in replacement of the oil. This cake is so good!! Thank you for sharing it with us!!

    1. Hello and thank you for your review. I'm so happy you loved it and thanks for sharing about the Greek yogurt in place of oil. That's a great swap.

    2. Hello could you add sour cream to this cake to make it more moist ?

      Delete
    3. Hi! I think if you wanted to use sour cream the way the other reader used Greek yogurt it would work but to add it to the existing recipe without swapping the oil out might not work. The cake is pretty moist as written in the recipe because of the addition of fruit. Hope this helps!
