Ham, Egg and Avocado Sandwich makes a great breakfast, lunch or light dinner! Full of flavor anytime of the day!
It's Secret Recipe Club reveal day, and this month I was assigned to the blog, Amy's Cooking Adventures. Amy is a mid-western girl, like myself who loves to cook and bake (ha! me too!) In fact, it's kind of crazy how much I found Amy and I have in common once I started reading her "about page" right down to the names we chose for our blogs! That's why it didn't surprise me one bit that I could relate to so many of her wonderful recipes. I had a super hard time choosing which recipe to make for the reveal! There are just so many great recipes with great recipics on her blog. I really enjoyed browsing through it.
I have several of Amy's delicious recipes bookmarked to make in the future! I loved the way the Waffle Iron Eggs n' Biscuits looked and the Texas Roadhouse Sweet Yeast Rolls had my mouth watering! I am also going to find time to make her Roasted Chickpea Tacos! But today, I am focusing on this delightful sandwich.
In Amy's original recipe, she uses bacon, a whole egg and serves it up on an Everything bagel (which is an amazing combo!) but to keep the calories in check, I made a few substitutions. I swapped the bacon for some low fat ham, the bagel for some toasted light rye bread, and the egg for eggbeaters. I also added a smear of Dijon mustard to my sandwich for a little kick!
I made this sandwich for a hearty breakfast, but it would be great anytime of the day. It's a really delicious combination of flavors. Thanks Amy for this wonderful recipe! I will definitely be back to make more of your recipes.

Ham, Egg, and Avocado Sandwich
A wonderful combination of flavors great for breakfast, lunch or dinner!
Ingredients
- 2 sliced of "light" rye bread (or any lower calorie bread) lightly toasted
- Dijon mustard
- 1/4 cup eggbeaters
- 1 slice of reduced fat swiss cheese
- 1/4th fresh avocado, sliced
- handful of organic baby spinach
- 2 oz. low fat ham, thinly sliced
Instructions
- Heat a small nonstick skillet sprayed with cooking spray. Add eggbeaters and cook, folding into a small patty.
- Spread the one side of one of the toasted bread slices with the Dijon mustard. Add the cooked egg, Swiss cheese, avocado, spinach and ham. Top with remaining toasted bread. Enjoy!
Yield: one serving
