Thanksgiving Leftovers Casserole

Thanksgiving leftovers. If you've got them, you need ways to use them up in the most delicious ways. This Thanksgiving Leftovers Casserole is just the thing to repurpose those leftovers into a completely different dish the whole family will enjoy!

This leftovers casserole is a tasty way to use up Thanksgiving leftovers (turkey, mashed potatoes, stuffing).

In this easy recipe, leftover stuffing makes the "crust" layer, followed by a creamy leftover turkey/vegetable layer then topped with cheesy mashed potatoes.  It's a snap to assemble and only takes 30 minutes to bake up!

I'll be honest, when I made it, I was really skeptical. Especially with the mayonnaise ingredient.  I didn't think this would be something myself or my family would like...but we ended up really enjoying it. The mayo actually gave it a nice creaminess! Who would have thought?

I have to admit, my family is not big on leftovers.  We will usually do one more meal after Thanksgiving with the leftovers in their original state, but after that, they just seem to sit.

When I am able to repurpose leftovers into something different, my family is more apt to eat them.  Since I hate wasting food, I like having an arsenal of ideas to use them up with.


Thanksgiving "anytime of the year" Casserole

If you don't have any leftover ingredients on hand, or are missing an ingredient, this leftover casserole can also be assembled using leftover chicken, prepared instant mashed potatoes, prepared instant stuffing, and frozen veggies!

It's a comforting casserole that says, "Happy Thanksgiving" in every bite!

Repurpose your Thanksgiving leftovers into a whole new meal with this Leftover Thanksgiving Casserole recipe! In this easy recipe, leftover stuffing makes the "crust" layer, followed by a creamy turkey/vegetable layer then topped with cheesy mashed potatoes.

Ingredients

  • 2 cups of leftover stuffing
  • 4 cups chopped leftover roasted turkey
  • 2 cups of leftover mixed veggies (what ever you have)
  • 3/4 cup mayonnaise
  • 3 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/8 tsp. paprika
  • 1/2 tsp. dried thyme
  • 2 green onions, sliced

Instructions

  1. Heat oven to 375 degrees F. Spray a 13 x 9" baking dish with cooking spray. Spread the stuffing on the bottom of the pan in one layer.
  2. Combine the turkey, veggies, mayo and dried thyme. Spread the turkey layer over the stuffing.
  3. Mix the potatoes with cheese. Spread the potatoes over the turkey layer. Sprinkle with paprika.
  4. Bake 30 - 40 minutes or until heated through. Garnish with green onions.

  4. Looks like you have the leftovers covered Renee! Lots of good ideas and recipes galore. My mom usually divided up her leftovers and sends them home with the guests so she isn't left with too much. I will probably do the same thing this year since we are empty nesters!
