Roasted Brussels Sprouts w/Maple-Balsamic Drizzle


I hope everyone had a wonderful Christmas and happy holidays!  Mine were one word....busy!  Wow...I think I was going from 3pm Christmas Eve straight to 12am Christmas night!  It was great family time though, and I wouldn't trade it for anything in the world!

To change gears from the posts of treats and cookies highlighting December, I want to share a fabulous healthy side dish I prepared for Christmas Day....Roasted Brussels Sprouts w/ Maple-Balsamic Drizzle.  If you don't like Brussels sprouts, THIS is the recipe that WILL change your mind!  The original recipe is from WW Online, and I did not change a thing.  It is super easy and so tasty.  It goes great with just about any kind of meat you choose to serve it with.

Roasted Brussels Sprouts w/ Maple-Balsamic Drizzle

Servings - 6    Serving Size - about 3/4 cup cooked brussels sprouts   Points Plus per Serving - 3 points+
Calories - 122,   Total Fat - 5g,   Carb. - 18g,   Protein - 5.1g,   Fiber 5.7g

2 cups uncooked Brussels sprouts, trimmed and halved
2 TBS. extra virgin olive oil
2 1/4 tsp. kosher salt, divided
1/4 tsp. fresh ground black pepper
3 TBS. balsamic vinegar
2 TBS pure maple syrup 

1.  Preheat oven to 450 degrees F.  In a bowl, coat the Brussels sprouts with extra virgin olive oil, 2 tsp. kosher salt and pepper.   Pour sprouts onto cookie sheet lined with silpat OR nonstick aluminum foil.  Arrange them in single layer.  Bake in oven for about 20 minutes, stirring halfway through, until caramelized and soft.  

2. While sprouts are baking, in a small saucepan, combine the vinegar, syrup and 1/4 tsp salt.  Heat on stove on med heat to boiling until thick and saucy, about 3 minutes.   DO NOT OVERCOOK! 

3.  When sprouts are done, spoon into serving dish and drizzle with syrup.  Serve and enjoy!

As I mentioned, Christmas was super busy for me!  ( not unlike the rest of December!)  I am so ready to have some boring in my life already!  lol  I got a really nice new gift for Christmas though, a new computer!  I am still trying to get used to it.  It is very different working from a laptop when you are used to a desktop!  I am slowly adding all the bookmarks and trying to figure out all the passwords I need.  I also got some new cookbooks ( inspiration!) and a really awesome herb chopper I haven't had the chance to use yet. 

I hope that I will be able to find more time to actually COOK now that the holidays are almost behind us!  What kind of nice things did you get for Christmas?

  1. The hubby loves roasted sprouts! I will try this next time. Although I dont have maple syrup and its way to expensive here to buy, lol! So I may leave that out! I want to try the higher temp too. Ive only roasted them at 400 I bet they are better at the higher temp. Thanks!

  2. @ Christina...roasted them at the higher temp gives them a really nice caramelized taste! And if you can't get or don't have the syrup, I might substitute a bit of brown sugar for it in the drizzle. The sweet/acid combo is what makes the sauce! :)

  3. I love brussels sprouts and this recipe is one I will have to try.

    The hustle and bustle of December is fun but it's nice to be on "this" side of the holiday!

    I think you will love having the lap top. Being able to move it from room to room is so nice and I love having mine in the kitchen when I am cooking. I cover the keyboard with plastic wrap to prevent any food from getting on the keyboard while I cook.
    I got one new cookbook and I love going through and picking out new recipes.

    I can't wait to see what you will be show casing on your blog as you try new recipes.

  4. I love brussels! My fav way to enjoy them is simply steamed! We recently tried them roasted with an orange soy glaze that was awesome-makes me really want to try your version! Yayyy for the new computer

    I am ready for some boring, too! I badly want to make a cookie recipe from my new cookbook, but I am going to reserve that for a few weeks from now once the holiday craziness has simmered. I got a new pair of hockey pants, a bluetooth, a new lap top battery, a cookbook, and lots more. Santa was very good to me this year ;)
