Yup...it's gotten COLD over the past week in much of the country, including my backyard and the colder temps have got my thoughts on fall and APPLES! This muffin recipe is super easy because it starts with a boxed baking mix ( I used Heart Smart Bisquick). The tender and moist muffins whip up in no time for a nice afternoon treat or morning breakfast for 4 points+.
The original recipe comes from WW online, but I have adapted it to my tastes and to ingredients I had on hand. I think next time I might opt to mix the apples all the way through the batter, rather than spooning them on top. These muffins are best enjoyed warm, but leftovers can be reheated in the microwave for about 10 - 20 seconds.
Easy Apple Spice Muffins

Servings - 12 Serving Size - 1 muffin Points Plus per serving - 4 points+
Calories - 152.1, Total Fat - 4.1g, Carb. - 26.7g, Protein - 3.3g, Fiber - 0.5g
2 cups baking mix ( I used Heart Smart Bisquick )
1/2 cup sugar
1 tsp. apple pie spice
2 tsp. ground cinnamon, divided
2 large eggs, slightly beaten
3/4 cup skim milk
1 tsp pure vanilla extract
2 TBSP unsalted butter, melted
1 large golden delicious apple, peeled and finely diced
2 tsp brown sugar, packed
1. Preheat oven to 350 degrees F. Line 12 cup muffin tin with paper liners or spray each well with cooking spray.
2. In large bowl, combine the baking mix, sugar, apple pie spice and 1 tsp cinnamon.
3. In 2 cup glass measure or small bowl, combine the melted butter, eggs, milk and vanilla extract. Pour the milk mixture into the dry mixture and combine. Fill muffin prepared muffin tins 2/3 full with batter.
4. In small bowl, combine the diced apples, brown sugar and remaining 1 tsp cinnamon. Top each batter filled well with apple mixture evenly. Bake in oven for about 15 - 20 minutes. Remove to wire rack and cool for 10 minutes before eating them warm.

While I have really enjoyed having my nephew stay with us for the past few weeks, it has really taken away time I am able to spend devoted to this blog. I apologize for the lack of new recipes lately. Soon he will be going back home with his parents, and I will really miss having him around!! But I will be better able to get back to the business of cooking, baking and blogging!
