They are packed with roasted almonds, almond butter, and Quaker ® Oats. Honey adds extra sweetness. Your whole family will enjoy them!
Old Fashioned Quaker ® Oats adds an extra boost of nutrition in these Almond Oatmeal Chocolate Chip Bites. I’ve been a fan of these oats for as long as I remember. They were a staple in my house growing up and they’re a whole grain staple in my house today. You’ll always find a container or two in my kitchen pantry.

Almond Oatmeal Chocolate Chip Bites are very easy to make, but you’ll need a good food processor or a heavy duty blender to grind up the roasted almonds. That’s the hardest part about this recipe. Not only is this recipe easy to put together, but everything gets mixed in right in the food processor for easy clean up.

Almond Oatmeal Chocolate Chip Bites

Delicious little bites of nuts, oats and chocolate all come together in your food processor for a quick and easy snack or even a dessert.
Ingredients
- 3/4 cup roasted unsalted almonds
- 1 1/2 cups Quaker® Old Fashioned Oats
- 1/4 cup sweetened shredded coconut
- 1/2 tsp. kosher salt
- 1/2 tsp. pure vanilla extract
- 1 cup almond butter (no added salt)
- 1/4 cup honey
- 3 TBS water
- 3 TBS mini chocolate chips
Instructions
- In large food processor fit with blade, add the almonds and process until finely ground into almond meal.
- Add in oats, and continue to process until oats are finely ground. Add in coconut, salt and vanilla extract. Process for 1- 2 more minutes to combine everything.
- Add in almond butter, honey, and water. Process until mixture starts to come together. Add mini chocolate chips and pulse a few times to combine.
- Scoop by TBS (I use a cookie scoop) and roll into balls then place onto a baking sheet lined with waxed paper or parchment.
- Refrigerate for 2-3 hours, then remove from pan and store in airtight container. 1 serving = 2 bites.

ReplyDeleteI Love Oatmeal! I enjoy Quaker Oats in the morning as a delicious warm old fashion bowl of oatmeal with walnut toppings and fresh fruit or inside my protein smoothie. I love making fresh chewy cookies with Quaker Oats. I also use Quaker Oats to make a hearty meatloaf. Quaker Oats is my favorite pantry staple and it is also my family's favorite as well.
