This sweet and savory breakfast casserole with sausage, cheese, and tart green apples is a fun way to start the day. I love a good breakfast casserole and this easy recipe delivers.
I love to serve breakfast bakes, and two of my favorites include this recipe for an overnight savory version that's perfect for any holiday morning, Make Ahead Christmas Morning Breakfast Casserole and this lightened up Asparagus, Bacon, and Cheese Stratta (or Strata). Does this recipe for Cheddar Sausage Apple Breakfast Casserole need to be refrigerated overnight before baking?
No, this breakfast casserole recipe doesn't need to refrigerate overnight. Technically, it's not written as a make-ahead breakfast casserole, but you can make it ahead of time and refrigerate it overnight if you like. I honestly think it's better when the bread is allowed to absorb the egg mixture longer, but it's not neccessary. Just take extra care in assuring the egg mixture is completely combined with the other ingredients before baking.
Can I use any kind of sausage in this breakfast casserole with sausage?
Yes! I used fully cooked chicken sausage in my dish, but you could use any kind of fully cooked sausage you like (pork, turkey, chicken). You can also substitute uncooked breakfast sausage (like Jimmy Dean). If subsituting fully cooked sauage for uncooked sauage in this recipe, you will need to brown sausage in a large skillet over medium-high heat before adding it to the casserole and baking. You could even kick it up a notch with spicy sausage!
Can I use any type of cheese in this breakfast bake?
I used cheddar because cheddar cheese goes so well with apples. Any type of cheese that melts well when heated would work.
What kind of bread works best with this recipe for sausage breakfast casserole?
I used day-old Italian bread in this recipe, but you could use just about any kind of bread you might have on hand. My favorite is Italian or Sourdough bread. Even english muffins or leftover hot dog or hamburger buns would work!
Can I use a sweet variety apple in this recipe?
I used tart granny smith apples in this breakfast casserole recipe, but you could use a sweet apple like honeycrisp or golden delicious. Any type of apple that is suitable for baking would work here. Or you could even mix apples!
How to make Cheddar Sausage Apple Breakfast Casserole
Ingredients needed: (see recipe card below for full ingredient amounts and complete directions)
Granny Smith Apple (or any sweet apple variety good for baking or a mix)
sugar
cinnamon
eggs
milk (part can be substitued with heavy cream for more richness)
bread
sausage
Cheddar cheese (or any type of melty cheese)
salt
Preheat oven to 325 degrees F.
1. Spray a 3 quart casserole dish with cooking spray.
2. In small bowl, combine the chopped apples, sugar and cinnamon. Set aside.
3. In a large bowl, combine the milk, eggs, and salt with a wire whisk.
4. Add bread cubes, apple mixture, sausage, and 1 cup of the cheese to the egg mixture and stir to coat everything well.
5. Pour egg mixture into the prepared casserole dish and level top. Sprinkle on remaining cheese.
6. Bake in oven according to directions provided in recipe card below.
7. Allow to cool 10 miutes before cutting for serving. Store leftovers in airtight container or use plastic wrap.

Ingredients
- 1 large Granny Smith Apple, peeled, cored and finely chopped
- 1 TBSP granulated sugar
- 1/2 tsp. ground cinnamon
- 6 large eggs
- 2 cups milk (or half heavy cream for richer casserole)
- 6 cups cubed day-old (slightly stale) Italian bread
- 12 oz. fully cooked chicken sausage, diced
- 2 cups shredded cheddar cheese
- 1/2 tsp. kosher salt
Instructions
- Preheat oven to 325 degrees F. Coat 3 quart baking dish with cooking spray and set aside.
- In small bowl, combine the chopped apples, sugar and cinnamon. Set aside.
- In large bowl, whisk together eggs, milk and salt.
- Add bread cubes, reserved apple mixture, chicken sausage, and I cup of the cheddar cheese to the egg mixture and mix to coat everything well with egg.
- Pour into prepared baking dish and level top. Sprinkle with remaining cheddar cheese and bake for 40 - 45 minutes or until browned and set. Allow to cool for 10 minutes before serving.

ReplyDeleteIt's not really. You can find chicken sausage with apple already inside and cheese goes perfectly with it. We enjoyed it. I hope you will too. :)
