Strawberry, Avocado and Spinach Salad with Lime Poppy Seed Dressing is a delicious and nutritious combination of flavors and textures. Great on it's own as a light meal or on the side with some grilled chicken or fish.
Lately, my son and I have been on an all out avocado kick. We LOVE them! We have them for breakfast, lunch and dinner...and it's a good thing, because avocados are so good for you! They contain more potassium than a banana, they are loaded with heart healthy monounsaturated fatty acids, they are full of fiber, and they taste wonderful in this salad.
Spring is definitely in the air here in NE Ohio and this salad made a great lunch for my son and I last week. I like to have salads like this for lunch when the weather warms up. I always feel like I am being so good when I eat like this. And the truth is, I am. Good fats from the avocados and almonds, vitamin C from the dressing and the strawberries and plenty of fiber make this salad a healthy choice.
The Lime Poppy Seed Dressing is killer! So darn good and easy to make too! To make the dressing, I put all the ingredients except the poppy seeds in my magic bullet and just gave it a whirl, then added the poppy seeds. You will have more dressing than you need for this one salad, so store the leftovers in the fridge and just whip up with a fork before using again, as it will separate when stored.
If you love strawberries, avocados and lime, this salad is a must make for you! Besides being absolutely delicious, it's so pretty too! Pretty like a sunny spring day!
Strawberry, Avocado, and Spinach Salad with Lime Poppy Seed Dressing
A delicious and healthy combination of flavors and textures dressed in a sweet citrus-y dressing.
Ingredients
- 2-3 cups fresh organic baby spinach
- 1 cup sliced fresh strawberries
- 1/4 of a fresh avocado, diced
- 2 TBS sliced raw almonds
- For Dressing:
- 1/4 cup granulated sugar
- 1/4 cup fresh lime juice
- pinch salt
- 1 tsp. Dijon mustard
- 1/4 tsp. onion powder
- 1/4 cup olive oil
- 1/2 TBS poppy seeds
Instructions
- Arrange spinach, strawberries, avocados, and almonds on a plate.
- Make dressing: Add sugar, lime juice, salt, Dijon mustard, onion powder and olive oil in a blender. ( I used my magic bullet). Blend until combined. Stir in poppy seeds. This recipe will yield about 1 cup of dressing.
- Drizzle the salad with about 2 TBS of dressing. Enjoy!
Yield: 1 serving, about 1 cup of dressing
Prep Time: 00 hrs. 10 mins.
Total time: 10 mins.

ReplyDeleteI keep meaning to make a similar salad but end up eating one of the components before I can get to it. I have a weakness for strawberries and avocados by themselves, which means I know this salad would be awesome too!
