These Margarita Cupcakes are a fun and tasty way to end a fiesta! Lemon-Lime flavored cupcakes are spiked with tequila and frosted with a lime buttercream for a yummy boozy treat!
One of my favorite drinks is the classic margarita, on the rocks, in a salt rimmed glass. Such a great cocktail!
These cupcakes are my homage to the classic cocktail, but in dessert form! How fun is that?
This cupcake recipe is so easy to make because it starts with lemon flavored boxed cake mix. Any brand cake mix will work with this recipe.
I love to make creations that start with boxed cake mix! All the hard guess work is taken out of the equation when you use boxed cake mix and you get a blank canvas and create all sorts of flavor combinations.

These pimped out into these citrus-y lovelies are for those 21+ only. They do, afterall, contain 1/2 cup tequila. My theory is that most of the alcohol bakes out in the oven, but you just never know.

ingredients:
for cupcakes:
- 1 - 15.25oz. box of lemon cake mix
- 1/2 cup water
- 1/2 cup canola oil
- 1/2 cup tequila
- 1 TBSP grated lime zest
- 3 large eggs
- 1 - 4 serving size box of lime flavored gelatin (can be sugar free or regular)
for buttercream frosting::
- 1/2 cup unsalted butter, softened to room temp
- 1/4 tsp. kosher salt
- 2 1/2 cups powdered sugar
- 1/2 tsp. pure vanilla extract
- juice of half a lime

How to cook Margarita Cupcakes
- Preheat oven to 350 degrees F. Line standard muffin tins with paper liners (I love the parchment ones!)
- In large bowl, combine all cake ingredients with electric mixer on low. Beat on med-high for about 2 minutes.
- Fill paper liners about 2/3's of the way full. Bake in oven until cake is done (toothpick inserted into center comes out clean) or about 15 - 20 minutes. Remove from pans and allow to cool on rack.
- Make the frosting by combining all frosting ingredients until smooth. Frost cupcakes once they are completely cooled and garnish as desired with green sprinkles or sugar and lime slices.
NOTES:
Want the taste of a margarita without the alcohol? Replace the tequila in the recipe with water.
