Tuna Nicoise Sandwich with Sandwich Thins®

Healthy tuna mixed with semi-traditional Nicoise salad ingredients in a sandwich, is the perfect lunch or light dinner during lent or anytime of the year.  Made even better when you use Brownberry®, Arnold®, Oroweat® sandwich thins!





When I was asked to do a review for Brownberry®/Oroweat®/Arnold® and Thomas® Weight Watchers endorsed bread products, Sandwich Thins®, Pocket Thins®, and Bagel Thins®, I jumped at the opportunity. (Disclosure: Sandwich Thins®, Pocket Thins® and Bagel Thins ® provided me with coupons for free product and a gift card for my recipe ingredients. All opinions expressed in this honest review are mine.)  I have been buying these products since I began Weight Watchers several years ago.  I love that they are ALL only 3PP each which makes them easy to fit into the WW lifestyle. Did I mention that they also all TASTE GREAT??

All Arnold®, Brownberry® and Oroweat® Sandwich Thins® Rolls are cholesterol-free foods, containing zero grams of Trans Fat and no high fructose corn syrup. They are available in 100% Whole Wheat, Healthy Multi-grain, Honey Wheat, Flax & Fiber. For my review, I decided to make the Weight Watchers recipe for Tuna Nicoise Sandwich with the Multi-grain Sandwich Thins®.  This tuna sandwich not only sounded great to me, but all this goodness for only 6PP, sounded even better!  I was not disappointed!

I didn't have any light Dijon vinaigrette as called for in the original recipe, but I did have a lemon vinaigrette that I subbed in for the dressing.  I added a tsp. of Dijon mustard to the dressing and it gave wonderful flavor to the tuna.  I also used Kalamata olives in place of the black olives, because I think they are so much more flavorful! I also added the optional 1/2 of a hard boiled egg for an extra point+, because it just isn't nicoise without it!  This combination of flavors was perfect on the Multi-grain Sandwich Thin®.

Give all the varieties of Sandwich Thins®, Pocket Thins®, and Bagel Thins® a try!  I love the plain Bagel Thin® toasted with a smear of reduced fat cream cheese in the morning or as an afternoon snack and I often take the Multi-grain Pocket Thins and cut them into wedges as dippers for my Homemade Hummus.  You can find ways to enjoy these breads all day long!




Tuna Nicoise Sandwich with Sandwich Thins®

Tuna Nicoise Sandwich with Sandwich Thins®

Ingredients

  • 1 Arnold®/Oroweat®/Brownberry® Multigrain Sandwich Thin®roll
  • 4 oz. canned tuna, packed in water and drained
  • 1 TBSP light Dijon vinaigrette dressing (I used lemon + 1 tsp. Dijon mustard)
  • 1 TBSP chopped, pitted Kalamata olives
  • 1/2 cup arugula, loosely packed
  • 1/2 small tomato, sliced
  • salt and pepper, to taste
  • 1/2 sliced hard boiled egg, optional (add 1P+)

Instructions

  1. Combine the tuna, dressing and olives
  2. Take one half of the Sandwich Thin® roll and top with the tuna mixture. Top with remaining ingredients and then the other half of the roll.
Yield: 1 serving/sandwich
Prep Time: 00 hrs. 08 mins.
Cook time: 00 hrs. 00 mins.
Total time: 8 mins.
